Grilled Salmon Filets

I wanted something different than our usual chicken, beef and pork. My boyfriend isn’t really a fish fan (except for sushi), but he agreed to have salmon for dinner!

I talked to a few friends to see how they prepare their salmon and there are so many different ways! Some friends added vegetables in with the salmon, but I didn’t do that. Some of the same spices that came up in conversation were thyme, basil and garlic.

My boyfriend actually liked the way I made the salmon, so he has agreed to have it at least once a month lol!

This serves 2 people:

  • 1.5 pounds of salmon, cut in half to make two filets.
  • 1 lemon
  • 3 tablespoons of butter
  • 1 teaspoons of minced garlic
  • 1 teaspoons of ground thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  1. Preheat grill to medium heat – we have a gas grill and set it to 450°F.
  2. Melt the butter and mix in the garlic, ground thyme, dried parsley.
  3. Slice the lemon into slices.
  4. Cut a piece of foil big enough to be able to wrap the salmon in.
  5. Place the salmon filets in the center.
  6. Sprinkle salt and pepper over the filets.
  7. Pour the melted butter mix all over the filets and place the lemon slices on top.
  8. Wrap the salmon and grill until it is done.

How do I know when my fish is done? Using a fork, gently twist the meat at the thickest point of the filet. If the fish is no longer translucent or raw looking and flakes, then it is time to eat! The internal temp for fish is between 140°F and 145°F.

I paired our salmon with rice and peas!

Banana Chocolate Chip Muffins

It is only Thursday… feels like it should be Saturday. We finally signed up for Disney+ and have been watching too much TV lol. We watched WandaVision and now on to season two of The Mandalorian. This last episode had spiders… big spiders… and I don’t do any sized spiders. So I was off to the kitchen to bake!

I have a few bananas that need to be used… this happens every time I buy them lol.

I found this Healthy Banana Muffins recipe from Cookie + Katie. Best banana muffin recipe I’ve tried yet!

  • I substituted 1 tsp baking soda with 4 tsp baking powder
  • I added 1 cup of chocolate chips

Two Ingredient Dough Bagels

For the dough recipe, click here.

After you’ve made your dough and are ready to make bagels, you’ll need an egg and bagel seasonings of your choice.

Divide your dough into 4 sections. If you plan on making smaller bagels, you can divide it them into more smaller sections.

Then for each section, roll into a ball, flatten and then punch through the middle. I am not really good at this part. Some people use donut/bagel silicone pans. I have these but didn’t use it this time.

Once you’ve shaped your bagels, you’ll want to brush them with egg and then season them.

For this recipe we used Everything Bagel seasoning and Minced Onion seasoning.

Preheat your oven to 375°F and bake for about 25 minutes!

Two Ingredient Dough

Have you ever heard of Weight Watchers Two Ingredient Dough?

Their recipe is a little different- it calls for more flour. When I tried it, I ended needing more yogurt because it was too dry. My boyfriend said it was good but he could really taste the yogurt.

There is another recipe that is floating around the internet. This one worked better because it was equal parts.

All you need is:

  • 1 cup of Self-Rising Flour

  • 1 cup of Plain Non-Fat Greek Yogurt

I use Metal Gold Self-Rising Flour and Fage yogurt.

They say it’s best to use a standing mixer with the hook, but I do not have one of those. So I just used a wooden spoon until it was all packed together, then I used my hands. If it is too sticky to handle, just add a little more flour.

Before using it, I let it sit in the fridge for at least an hour. I feel it is easier to work with after it’s been chilled.

You can also make this dough ahead of time- it can be refrigerated for up to 3 days.

This dough can be used for many things:

  • Pizza

  • Bagels & Bagel Bites

  • Calzones

  • Pigs in a blanket

  • Many more!
