Lemon Muffins, 3-ingredients Only!

It is a cold day here in Montana. So much for spring, it is snowing today. I woke up wanting Starbucks and a fruit flavored muffin. I wasn’t able to find a muffin recipe on the WW app, so I turned to google.

I came across Lemon Weight Watchers Muffins Recipe 1 Points Plus Value or 2 Smart Points! by cookeatgo.com. It seemed so simple, so I said “why the heck not!?”

All you need is 1 box of lemon cake mix, 1 container of lemon flavored nonfat Greek yogurt and 1 cup of water.

I’m sure you can do other flavors, such as strawberry. I was thinking I might try a pineapple flavored one with pineapple bits or maybe even blueberries! Yummm!

Before you mix your batter, preheat your oven to 350°. You can use cupcake liners, a paper towel or use a spray to oil your muffin pan.

Fill each pocket approximately halfway with batter. Cooking times vary depending on your oven. Mine took 17 minutes. I used a toothpick to check the center. Be sure to cool down the muffins before you store them.

I was able to get 24 muffins out of this mix. Using the WW Recipe Builder, each muffin is 1 Smartpoint. Of course, it may be different depending on the size of your muffin pan and the ingredients you choose to use.

These are so delicious! In my opinion, you cannot tell that I only used 3 ingredients!

According to the WW Recipe Builder, these muffins are only 1SP each on the Blue plan!

For those of you who are not on Weight Watchers, but would like to know the nutrition value, I have entered the ingredients I used into MyFitnessPal.
