Instead of another night of BBQ, I decided that instead of having whole chicken breasts, I wanted to try my hand at chicken tenders in the air fryer!
4 chicken tenders = 1 serving
This recipe makes about 8 servings:
-
8 ounces Chicken breasts, cut into strips. We use Kirkland Signature Skinless & Bonless Chicken Breast.
-
Avocado Oil Spray
-
1-3/4 cup Italian Bread Crumbs
-
1 tablespoon Lite Mayo
-
1-1/2 tablespoon Dijon Mustard
-
1/2 teaspoon Salt
-
1/2 teaspoon Pepper
INSTRUCTIONS
(Optional) Preheat oven to 400°, spread the bread crumbs on a baking sheet. Spray the bread crumbs with oil and bake for 3-5 minutes. Once they are crispy, pour into a glass bowl and set aside.
Rinse the chicken, cut away any fat, then cut chicken breasts into strips.
In a separate bowl, mix the mayo, dijon mustard, salt and pepper.
Add the chicken to the sauce bowl. Stir, making sure all the strips are evenly coated. Then dip and evenly coat each strip with bread crumbs.
Preheat your air fryer to 400°F.
Spray your air fryer basket with oil, then lay the strips in the basket. Make sure they are not touching each other. Lightly spray the top side of the strips with oil.
Cook the tenders for 12-14 minutes, flipping them over at the halfway mark. Make sure the internal temperature is 165°F before eating.
Serve right away with your favorite sauce (we love ranch or honey mustard) and side dish!
